How to Make Akara-Pancakes

Hello People, Hope you all are doing great. I'm sure many of  you will be like "what's akara-pancake again" lol... That's why you are on Nitie's Creation Blog, where i give you a new twist to your regular dishes. I first saw this dish on a friend's dp (display picture) on bbm (blackberry messenger), and i enquired and she gave me the recipe. How to make Unripe Plantain Porridge

Hello People, I came to know about this dish when my Dad was diagnosed of Diabetes. At that point his doctor told him to cut down on his Carbohydrate intake and advised he eats more of protein and iron rich foods. One of his favorite from the Doctor's advise was Unripe Plantain Porridge (with lots of Ugu leaves) .Then we used to call it Kekefiyayi (this is the name people from Portharcourt and Bayelsa call it). It's a very healthy dish for diabetic patients, pregnant women, nursing mothers, children and even YOU. As a kid I loved this dish cos I always wanted to eat what my Dad was eating, (*Daddy's girl, *tongue out). This dish can be made with fish, beef, snails or any other protein you like. For this recipe, I made mine with dry fish (Azu Rivers State) *winks. How to Make Draw (Ogbono) Soup

Hello People, Ogbono Soup is commonly referred to as Draw Soup, because of its slimy consistency. This soup is made from Ground Ogbono (Wild African Bush Mango) seeds, very common in Naija Markets and African Shops Abroad. Depending on your preference, you could add Ugu (Fluted pumpkin) leaves, Uziza leaves, Okro or even cook without leaves. Some people even add Egusi(melon seeds) to theirs (though i haven't tried this). For me, I prefer using Uziza leaves cos of the aroma and flavor it gives to soups, but for this recipe i used Ugu leaves. How to make Edikaikong Soup

Hello People, It's been a minute, I have been pretty busy these days. Will try my best not too "disappear" for too long. Edikaikong or Vegetable soup originates from the Efik People of Akwaibom and Cross River States. This soup is made with a generous amount of Vegetables which makes it one of my favorite Nigerian Soups. Ugu leaves (Fluted Pumpkin) are very low in calories and contain no saturated fats or cholesterol. Studies have shown that when the essential nutrients are not destroyed, it has the capacity to increase red blood cells within a short period of time. They are a rich source of Minerals like Iron, magnesium, potassium and vitamins K, C, E and many of the B Vitamins. Hello People, Growing up i HATED eating beans, and the only way my Mum "forced" us to eat it was when plantain was added to it. Most times the plantain was more, so that was enough motivation. She always said "beans will make you grow tall". lol When i was in Secondary School (boarding house) i remember, days we had "beans porr" on the menu, the dining hall was always scanty. Hello People, It's Sunday! Hope you guys were in Church! Remember in the presence of God there's fullness of joy. Many families in Nigeria eat Rice (whether Jollof, Fried or White) on Sundays, my family is no exception. Come to think of it, where did this "norm" originate from??? For me, I try to add some twists to my Sunday rice instead of the "normal rice" cos I'm bored (yawning) already. So today, I decided to make Gizzdo! I know you will be wondering what it is. Gizzdo is short for Gizzard and Dodo [fried plantain] in pepper sauce. How to make Crunchy Peppered Snails

Hello People, Snails! Snails!! Snails!!! How i love thee (*words of a glutton). I love snails alot, especially when crunchy and stir fried in pepper sauce. Some people say "when you eat snails, you will be slow", i honestly don't believe that cos i have been eating snails since i was a kid, and with all humility, i aint "slow" mehn. Hello People,  I will be sharing how to make Zoborodo drink (Zobo for short). It is a red coloured drink hence I call it "Naija Red Wine" *LOL. It has been proven to lower blood pressure and cholesterol levels. It is a rich source of Vitamin C.This drink is very popular in Nigeria especially the Northern part and enjoyed when served chilled. It is made from dried hibiscus plants. I love to make my Zobo with all natural ingredients instead of using artificial flavours. Simple Sandwiches

Hello People, This sandwich for me dates back to when I was in Nursery School, my Mum loved to make it for us, most times as breakfast or snack to school. We used to enjoy it with hot chocolate or a cup of cold ribena (good old days). It can be served as a finger food during parties. I call it simple, cos all the ingredients needed are most times, if not always available in your kitchen and it takes less than 15 minutes to prepare. So here goes it: My simple sandwich & a cup of hot chocolate Ingredients: For Sandwich: Sliced Bread 1/2 Tin of Corned Beef (alternatively, a tin of sardine) 30g of butter 1Tin of evaporated milk Tools: Chopping Board Bread Knife Direction: 1.
