I'm sure many of you will be like "what's akara-pancake again" lol... That's why you are on Nitie's Creation Blog, where i give you a new twist to your regular dishes.
I first saw this dish on a friend's dp (display picture) on bbm (blackberry messenger), and i enquired and she gave me the recipe. Shout out to Oni K!Though i planned on trying it, i was caught up with a lot of other recipes that i forgot about it.
This past weekend, i was about making breakfast for my Fam when i remembered the pic, and i said to myself, "why not give it a try". After making it and taking pix of the process, another thought came; "What will you call it", after thinking it through i decided to call it "Akara-Pancakes" why, you may ask? The answer is simple, It is the same "Akara" you know but made in a "Pancake" form. *winks
Unlike the regular Akara (bean fritters or bean balls) which is deep fried in plenty of oil, akara-pancakes are cooked in very little oil, same quantity of oil used in making pancakes hence the name.
By making your Akara with this method, you save Vegetable oil and reduce your consumption of oil. It is ideal for breakfast.

Now to the recipe:
Ingredients:
1 Cup of Brown Beans
1 Big onions
5 Red scotch bonnet pepper
1 cooking spoon of powered crayfish
Vegetable oil (for frying)
1 Stock cube
Salt to taste.
*Ingredients are easily available in your kitchen
Tools:
A blender/food processor
Frying pan
Direction:
1. Wash beans to remove the husk. Wash pepper and onions
2. Blend the beans, pepper and onions in a food processor. * refer to the kitchen tips below
3. Pour the blended mixture into a bowl, add crayfish stock cube and salt, then stir properly.
4. In a frying pan, pour in little vegetable oil, (about 2 table spoons) and heat up to a medium flame, pour some mixture into the frying pan. Tilt the pan so that the mixture spreads evenly.
5. Cook for 3minutes, then flip to the other side and do same.
Your akara-pancakes are ready when both sides are light brown.
Enjoy with pap (akamu), oat, custard or as you like. I had mine with vanilla flavoured custard...mmmmmm

Kitchen Tips:
*If you are using your food processor at home to blend the beans, after removing the husk, soak for about an hour in water, to make it slightly soft, so you don't spoil your blender. Also add some water when blending too, but not too much, a quarter of a cup should be fine else you have a watery mixture
If you blend using those heavy duty grinders in the market, then you don't need to soak the beans after removing the husk.
Note that using the heavy duty blenders, gives a smoother paste.

Hey... Nice to see you again after a long time. Your recipes are always delicious. I try most of them. Like these recipes are so easy and can be made in a few minutes. Babies will like to participate in cooking also may be.
