How to Make Porridge Beans (with tomatoes)


Hello People,

Growing up i HATED eating beans, and the only way my Mum "forced" us to eat it was when plantain was added to it. Most times the plantain was more, so that was enough motivation. She always said "beans will make you grow tall". lol
When i was in Secondary School (boarding house) i remember, days we had "beans porr" on the menu, the dining hall was always scanty. Even during my Uni days, i don't remember cooking beans. I wasn't just interested.
After several years of running away from beans, i finally got the "killer" recipe that changed everything. Guess what? My hubby thought me this recipe (*winks).
I will be sharing this recipe with you all, but before I do, here are some health benefits of Beans:
1. They are high in protein and contain little or no fat. They are also rich in minerals like iron, magnesium and zinc.
2.Also, they are rich in fibre which  helps keep your cholesterol levels healthy by preventing cholesterol from being absorbed into your bloodstream, which reduces your risk of developing heart disease. Additionally, high-fibre foods keep you feeling full, since they are digested slowly,  good for weight watchers.


A plate of beans & boiled plantain

Ingredients
- 3 cups of Black eyed (Brown) beans
- 3 cooking spoons of Palm oil
- Tomatoes and pepper (chopped)
- Spring Onions (Chopped)
- 2 cooking spoons of crayfish (Ground)
- 2 Stock cubes
- Salt to taste

Direction:
1. Wash beans and boil till tender (without any of the ingredients) and set aside

2. In a frying pan, pour in palm oil, heat up, then add spring onions, tomatoes and pepper, stir fry, add crayfish, salt, stock cubes, simmer for 5 minutes.

3. Pour in the sauce from 2 above into the pot of beans, stir using a wooden spoon, simmer for 10 minutes. 
There you have it, "Fried Beans"! Serve with boiled/fried plantain, fish, beef, chicken or even rice.

Kitchen Notes:
*Do not add salt while boiling the beans as this takes the beans longer time to cook
*When heating up palm oil, ensure your kitchen windows are opened to avoid choking, also, don't bleach the oil, just heat up for 2minutes. 
*Stir the beans using a wooden spoon to avoid burning.

White soup is called Nsala Soup by the Ibos and Afia Efere by the Efiks. It is one of the simplest Naija soups in terms of time taken in preparation and ingredients used. How to Make Draw (Ogbono) Soup

Hello People, Ogbono Soup is commonly referred to as Draw Soup, because of its slimy consistency. This soup is made from Ground Ogbono (Wild African Bush Mango) seeds, very common in Naija Markets and African Shops Abroad. Depending on your preference, you could add Ugu (Fluted pumpkin) leaves, Uziza leaves, Okro or even cook without leaves. Some people even add Egusi(melon seeds) to theirs (though i haven't tried this).
